I think the stuff that's currently in there isn't relevant anymore because it was implemented site-wide since then, but it should give you an idea of how it works, at least. You might be able to define a CSS rule that sets the default font to Arial, which should work the same as a span tag, except it would be applied everywhere automatically. See also [[Help:Advanced formatting of wiki pages]].
